Hello everyone! The course has finished, and I now have more time to post here. I know what you’re thinking... "You've been missing for ages," and yes, I can't deny it because it's true.
The reason? Honestly, a lack of motivation, stress from uni, new jobs, and my move into my own place. It's already been 3 months since I left my parents’ house and started living with my boyfriend. Well... I didn’t really leave my parents (I know that sounds a bit shocking), I still visit them and love them a lot, but the truth is, there comes a time when a bird needs to leave the nest and find its own path. I felt like I was at the right point in my life to start living independently, with my boyfriend.
The truth is: Life is hard, and you probably think you know everything when you live at home, but once you start living on your own, you realize how difficult even the simplest things can be — like buying a pair of socks! Especially when you’re trying to continue your studies and only work on the weekends. I want to help my boyfriend with the bills, so I save money and contribute to paying for whatever I can, like the shopping list, etc. If you want something, you need to work hard for it and make sacrifices — like no holidays this summer, at least for this year. Well, we went to the UK last Easter to visit my host family, so my boyfriend and I promised each other that we wouldn’t take a holiday this summer because we need to save money — and that’s okay. I practice languages, go to work every weekend, and it’s been helping me a lot to develop and grow as a person. I’ll be starting a new job in August, and I’ll be working during the week as well. I’m also really excited to continue writing this blog and practicing my English. I feel like I’m on the right path, and I just want to keep being myself, doing the things I love, and staying in touch with the people I care about — those who bring me good vibes.

- Cuisine style: Mediterranean
INGREDIENTS:
- 2 pieces of French bread (Baguette), Italian bread or similar
- About 180 g of Multi-colored cherry tomatoes (chopped)
- 1 or 2 garlic clove (Depends of how spicy you like)
- Balsamic vinegar
- Sea salt, black pepper
- Olive oil
- Fresh basil or dried Basil (Preferably fresh)
- Oregano
Method:
- Slice the bread diagonally and set apart. In a large bowl, mix the garlic ( I prefer to cook the garlic a bit in a pan with some oil before mix it with the others ingredients, but you can eat it raw if you prefer it) The chopped tomatoes with the basil and the oregano. Add olive oil and balsamic vinegar. Mix again and add some salt. Cover and chill for 15 or 20 minutes.
- Toast the bread in a pan with some olive oil and add the tomatoes. Eat imediately unless you want to eat mushy bread.
*Tip: Chop the tomatos with a sharp knife, this will prevent the tomatoes from being smashed.

INGREDIENTES:
- 2 mini barritas de pan (estilo baguette o similar)
- Unos 180 gr de tomates cherry multicolor (Cortados en daditos)
- Un tomate rojo
- 1 o 2 dientes de ajo (Dependde de lo picante que te guste)
- Vinagre balsamico de modena
- Sal marina, pimienta
- Aceite de oliva
- Albahaca fresca o molida (preferiblemente fresca)
- Oregano
MÉTODO:
- Abrir las barritas por la mitad y reservar a parte. Mezclar en un bol el ajo (Yo prefiero cocinarlo antes añadirlo con el resto de los ingredientes, pero puedes comerlo crudo si lo prefieres) Los tomates picados y las especias. Añade aceite, vinagre y sal y vuelve a mezclar. Dejar reposar durante uno 15-20 minutos.
*Consejo: Corta los tomates con un cuchillo muy afilado para evitar que se aplasten.
- Pon a tostar el pan en una sartén con aceite. Añadir la mezcla de tomate y especias por encima y comer enseguida, a menos que quieras comerte el pan blando.
